Each quill is hand-rolled from bark peeled the same day it's harvested, while it's still soft enough to shape by hand. Grown along the coastal southwest of Ceylon, now known as Sri Lanka.
True Ceylon cinnamon carries near zero percent of the coumarin found in cassia, the variety sold as "cinnamon" in most of the world. Every batch is bought directly from the farming families who grow it, and can be traced back to the estate it left.
